1 lb. (.454 kg) ground chicken, beef, pork or turkey
1 Tbsp. Mexican Fiesta Rub & Seasoning
1 Tbsp. tomato paste
1 Tbsp. water
1 cup Tex-Mex shredded cheese
1 package (454 g) egg roll wrappers
Oil for frying

Instructions

In a large frying pan, brown ground chicken; add Mexican Fiesta Rub & Seasoning, tomato paste and water. Mix well. Open one egg roll wrapper and put one tablespoon of meat and a pinch of cheese in the centre. Using basting brush or finger, slightly dampen the edges of wrapper. Then roll up and fold sides in. Best to roll them all up first before cooking. Heat oil and start to fry each side; takes 1 minute per side. Garnish with sliced green onions and finely diced peppers and serve with salsa, sour cream and guacamole (optional).

For Air Frying: Spritz egg rolls with oil and place in air fryer basket in an even layer, leaving space for air to flow around. You will have to cook in 2 or 3 batches. Cook at 390°F for 7 minutes or until golden brown on the outside, flipping halfway through cooking.
